Brewer’s Butter

Yield: About 1 ½ cups (375mL)



  • 1 can (473mL) Boldwin Pale Ale
  • 1 cup (250mL) shallots, chopped
  • 3 TBSP (45mL) cider vinegar
  • 1 cup (250mL) unsalted butter, softened
  • 2 TBSP (30mL) chives or garlic scape, chopped
  • 1 TSP (5mL) fleur de sel



  1. In a medium-sized pot, mix Boldwin Pale Ale with shallots and cider vinegar. Heat on medium for 20 to 30 minutes or until shallots are clear and cooked through and beer has completely evaporated.
  2. Transfer shallots to a bowl and keep cool.
  3. Once shallots are cooled, add butter, chives and fleur de sel. Mix with a spatula.
  4. If you wish, place butter in the middle of a piece of plastic wrap, fold plastic over and roll butter into a log.
  5. Place in fridge until butter is firm. Before serving, cut into thin slices and enjoy with corn, seafood or grilled meat!


Note: You can freeze flavoured butter logs for later use.
