Boldwin Brioche Burger Buns

Serves 8


  • ½ cup (125mL) milk
  • 2 TSP (10mL) sugar
  • ½ TBSP (7.5mL) instant yeast
  • ¼ cup (60mL) unsalted butter
  • 1 egg
  • 3 ½ cups (500g) flour
  • 1 TSP (5mL) salt
  • 200mL Boldwin Pale Ale
  • Drizzle of vegetable oil



  • ¼ cup (60mL) milk
  • 2 TSP (10mL) of desired garnish, such as sesame seeds, poppy seeds, caraway seeds, cumin, fennel, etc.



  1. Preheat oven to 350°F (180°C), cover a baking sheet with parchment paper, and place the rack in the middle of the oven.
  2. Place milk and sugar in a measuring cup and heat in microwave a few minutes. Add yeast and set aside for 5 minutes (the yeast should foam slightly).
  3. In a bowl, melt butter in microwave. Add egg and beat with a fork.
  4. In a large bowl, mix flour and salt.
  5. Pour milk mixture into the butter, then pour the liquid into the flour.
  6. Mix with your hands (or with the dough blade on a food processor at low speed). Add beer while continuing to mix.
  7. Knead with your hands (or let food processor continue to mix at low speed) for 5 minutes, or until dough is smooth and elastic.
  8. Place dough in an oiled bowl and cover with plastic wrap.
  9. Allow dough to rise until it doubles in volume (about 1 hour).
    Note: Placing dough in a warm place (like a warmed oven) will make it rise faster.
  10. On a lightly floured surface, divide dough into 8 equal pieces and roll with hands to form patties the size of hamburger buns. Place patties on baking sheet, leaving about 1” space between each.
  11. Brush each patty with milk using a baking brush, then garnish to taste. Allow to rise one last time until patties reach the size you’d like (30 minutes to an hour).
  12.  Cook in oven 11-12 minutes or until golden. Let cool before using.
